Frozen vegetables have higher nutritional value than fresh ones, according to a new study.
 
 
Scientists at the centre for food reform research at Sheffield hallam university in the UK say people should discard the old idea that frozen vegetables are of poor quality. Many vegetables and fruits can be frozen immediately after harvest without much loss of vitamins and minerals, and many so-called vegetables on the market have been stored in warehouses for several days. Green beans, for example, reduced vitamin C by 77 percent after seven days of storage. Studies have also shown that frozen and fresh green beans, when cooked, contain more beta carotene. "We looked at 37 products and found no significant nutritional difference between fresh and frozen foods, while fresh vegetables took too long to get from the farm to the table in the average household," harty said....
